Structured around the Botanical Cuisine Academy core principles of quality and discipline this course is designed to prepare you for the pace and rigors of the professional career, whether that will be employment: as a raw vegan kitchens, teaching raw vegan classes, or as a private chef.

The Botanical Way Course

It is a 9-week course a series of 3-hour Wednesday evening healthy food preparation classes – Cooked Vegan, Raw Vegan and Botanical Cuisine. Each class runs from 6.30pm – 9.30pm on the first, second and third Wednesday of the month, with 1 week off in between each level. The classes are spread over a 3-month period to enable you to enjoy your time in this fun, social, yet truly transformative process. The classes are paced at weekly intervals to ensure there is no pressure on your schedule. You will become eager to attend each subsequent class, and be naturally open to absorbing and implementing what you learn.

Food Styling & Photography Workshop

Weekend intensive workshop

This two-day intensive workshop will teach you the fundamentals of food styling and photography, showing you how those foodie magazines, cookbooks and websites do it. If you have ever wanted to make your food look like the professionals do and record it artistically for your own pleasure (and the envy of your friends), then this workshop will show you how.

In the photographing food section of the workshop, you will learn from the experts how to make the most of whatever quality digital camera you have—from an inexpensive point-and-click camera or cell phone to a professional camera.

In the food styling section of the Workshop, you will learn from the experts how to show off your beautifully presented and photographed raw culinary creations on your website and in recipe books and brochures!

Each day of the weekend course has been organized to teach you the essentials of the culinary arts. The pace of the course accelerates as you progress through each hour, and learning is cumulative and fast.

Flourish in Botanical Cuisine – Advanced

Take your cooking skills even further

Expand on the skills you’ve already learned with this 10 – hour addendum to Elements of Botanical Cuisine (the prerequisite for this course). Students will focus on creating balanced and sophisticated meals made with seasonal ingredients.

A commitment of 16 hours over the course of weekend will propel your culinary education well beyond those fundamentals, escalating you to a level of food knowledge that forever frees you from the step-by-step approach of following recipes. Flourish in Botanical Cuisine can be taken during any season, and as each season changes, so does the class. The lessons vary according to which vegetables, fruits, flowers, or heirloom produce that are in season.

Botanical Patisserie – Diploma

The art of perfection

Continue on this path on the skills you’ve already learned with this 16 – hour addendum to Flourish in Botanical Cuisine (the prerequisite for this course). Learn the skills you’ll need to work in a pastry kitchen, from chocolate confection, tarts and cookies, cakes, individual desserts, macaroons and cupcakes. With only 20 hours, two weekend courses this course builds on fundamental techniques taught from day one, reinforcing the basics as you advance through all 5 units of learning.

Achieving the adroitness necessary to work in the pastry kitchen is no easy feat. A well-rounded pastry chef must have command over the chemistry of chocolate, know how to work with tarts, be able to proficiently achieve the perfect rise and crumb in a génoise for a light and moist cake, and so much more. Working with precision, understanding “raw baking” science and flavor principles, as well as exercising your culinary imagination, are just some of the important abilities your chef-instructors will help you develop. Our committed chef-instructors will guide you along the way so that you can gain the confidence needed to take on the challenges that will push your pastry limits.
