Expand on the skills you’ve already learned with this 10 – hour addendum to the Elements of Botanical Cuisine (the prerequisite for this course). Students will focus on creating balanced and sophisticated meals made with seasonal ingredients.

A commitment of 16 hours over the course of weekend will propel your culinary education well beyond those fundamentals, escalating you to a level of food knowledge that forever frees you from the step-by-step approach of following recipes.

These weekend course has been designed to through you into the depth of culinary arts and train the Botanical Chef that lives within you.

Day 1

Introduction to Contemporary Botanical Cuisine

What you’ll learn:

  • Creating sophisticated multi-course menus
  • Recognizing and evaluating classic food pairings
  • Assessing seasonings and flavors correctly
  • Learning how to balance a menu, from appetizer through dessert

Day 2

Advanced Culinary Techniques

In Advanced Culinary Techniques, you’ll take the already impressive skills learned in Introduction to Contemporary Raw Cuisine to a new level.
